Back by overwhelming guest demand, our signature Beef, Bourbon & Barbeque event returns to The Clubhouse in 2026—bringing together the bold flavours, world-class craftsmanship, and convivial spirit that have made this one of our most beloved culinary experiences.

This year’s lineup once again features three masters of their craft:

• Danny McCallum, Executive Chef of Toronto’s iconic Jacobs & Co. Steakhouse, known for his mastery of premium cuts, refined technique, and unforgettable tableside moments.
• Matt Pittman, founder of Meat Church BBQ in Texas, celebrated pitmaster, teacher, and ambassador for slow-smoked perfection.
• Tyler Dyck CEO of Okanagan Spirits, Western Canada’s original craft distillery, returning with rare and award-winning whiskies, barrel-aged spirits, and expertly paired cocktails.

Together, they create a one-of-a-kind culinary celebration that blends elevated steakhouse cuisine with authentic southern barbeque and the depth of premium Canadian spirits—all set against the rugged beauty of Haida Gwaii.

What to Expect

Signature Dinners & Collaborative Menus - Each evening features a curated dining experience that showcases the strengths of our culinary guests—from prime cuts prepared with Jacobs & Co.’s precision to Matt’s signature rubs and smoke profiles. Bourbon & Spirits Tastings - Okanagan Spirits presents guided tastings of their award-winning whisky and bourbon-style spirits, including small-batch releases and rare barrel samples created exclusively for this event. Enjoy pairings woven into the dinners as well as informal tastings throughout your stay.

Unforgettable Fishing & Adventure - Between culinary events, spend each day on the water experiencing world-class salmon and halibut fishing in the iconic Bowl. After a full day on the ocean, return to the warmth of The Clubhouse for cocktails, premium wine, and exceptional meals.

Danny McCallum – Jacobs & Co. Steakhouse

Chef Danny McCallum has transformed Jacobs & Co Steakhouse into one of the finest steak destinations in the world. As Executive Chef since 2010, he is a true master of all things meat, having devoted years to studying everything from the anatomy of cows to the art of dry aging. Known for his attention to detail and insistence on using the highest quality ingredients, Danny brings a classic yet perfected approach to dining. With Jacobs & Co recently being named one of the World’s 101 Best Steakhouses, Danny’s expertise is globally recognized.

Returning once again to The West Coast Fishing Club’s Far Beyond Culinary Series, Chef McCallum will elevate this years Beef, Barbeque & Bourbon event with his impeccable creations.

Matt Pittman – Meat Church BBQ

We’re excited to welcome back Matt Pittman, pitmaster extraordinaire and founder of Meat Church, for this years Beef, Barbeque & Bourbon week. A Texas native with BBQ in his blood, Matt’s passion for smoking and grilling began with a single bite of Texas brisket, and he hasn’t looked back since. Now a seasoned expert, Matt has built a reputation through BBQ competitions, classes, and legendary tailgating events for the Dallas Cowboys. Whether you're a BBQ enthusiast or simply love delicious food, Matt’s skills and passion for the craft are sure to delight.

Tyler Dyck - Okanagan Spirits

Okanagan Spirits Craft Distillery is at the forefront of North America’s craft whisky movement, and at its helm is Tyler Dyck. Using heritage grains from the North-Okanagan region and innovative malting techniques, Tyler and his family have been producing award-winning spirits for over five generations. Named “Distillery of the Year” three times by the World Spirits Awards and recognized as “Artisanal Distillery of the Year” by the Canadian Whisky Awards, Okanagan Spirits continues to shape the future of craft whisky.

For this years Beef, Barbeque & Bourbon event, Tyler and his distillery will present exclusive, custom-crafted WCFC bourbon-style whiskies, including private-label, single-cask selections. Throughout the week, you’ll experience masterclasses and sip on expertly mixed cocktails that showcase the best of Canada’s craft whisky scene.
