For the final instalment of our 2026 Canada’s 100 Best culinary partnership series, The West Coast Fishing Club proudly welcomes Monarque, one of Montréal’s most celebrated and architecturally stunning dining rooms. Known for its refined brasserie style, depth of flavour, and exceptional hospitality, Monarque brings a distinctly Montréal sensibility to The Clubhouse.
Led by Chef Jérémie Bastien, this residency will highlight Monarque’s signature balance of classic technique and contemporary finesse—all thoughtfully adapted to showcase the ingredients and inspiration of Haida Gwaii.
Refined Multi-Course Menus - Guests will experience elegant, brasserie-inspired dining elevated through modern technique and seasonal Pacific Northwest ingredients.
Culinary Conversations & Guest Access - Enjoy opportunities to meet Chef Bastien, hear the stories behind the dishes, and experience the artistry that has made Monarque a standout on the national stage.
Fishing Adventures by Day - Spend your days on the ocean before returning to evenings of exceptional Montréal-inspired dining overlooking the rugged coast of Haida Gwaii.
Since 2018, Monarque has been a standout in Montréal’s dining scene, led by father-and-son team Richard and Jérémie Bastien. Housed in a restored 1845 heritage building, the Atelier Carle–designed space features two distinct experiences: La Brasserie, serving elevated French classics, and La Salle à Manger, offering a refined, technique-driven tasting menu.
Monarque’s desserts, crafted by Lisa Yu, pair beautifully with a 400-label wine list curated by sommelier Olivier Fontaine and a thoughtful cocktail program by Antony Berg. Family-run and widely acclaimed, Monarque is celebrated for its elegant cuisine, warm hospitality, and sense of place.

Jérémie Bastien opened Monarque in 2018 alongside his father, Richard Bastien. The restaurant—celebrated for its striking Alain Carle–designed architecture and its dual concepts, La Brasserie and La Salle à Manger—quickly became one of Montréal’s most acclaimed dining destinations. Monarque has earned numerous accolades, including Restaurant of the Year in Québec (2023) and #17 on the 2025 Canada’s 100 Best list.
In 2025, the Bastien family will launch Jardins Bastien, a bio-intensive greenhouse project that will supply Monarque with exceptional, hyper-local produce.
A lifelong student of the culinary craft, Jérémie’s passion was shaped by his childhood spent between the family’s restaurant and farm. He trained at the École Hôtelière de Laval and ITHQ, followed by formative experiences abroad—including stages in Burgundy, San Francisco, Vancouver (where he became a chef at 25), and later Sydney and Melbourne—each contributing to the thoughtful, refined approach he brings to Monarque today.
